GAPS Diet- week 1


I was reading my friends book "That Gaps Guide" and I love it-- it is like the Cliff Notes version of the GAPS book. (which Jason is reading because he has MANY questions). In this book it mentions SLOWLY beginning the GAPS diet-- now I think their verson of SLOWLY is really for those who have no experience at all in making stock, ferments, etc.... because it is REALLY REALLY SLOW--- however my goal is: the first week-- have 1 GAPS meal, then next week 2 GAPS meals and then by July 1 be FULL GAPS.

So to get started I cooked down 3 chickens from last fall... it made 3 GALLONS of stock. I cut up the meat and put it in the fridge seperately to use in the soup and otherwise.

Sunday was church so I didn't do much with GAPS then-- except to finish the stock and put it in the fridge. Well that is not true, when we got home late from church 3pm we were ALL tired so we laid down for a nap when we awoke at 5pm it was then I realized how hard it would be to get the kids to bed at a decent time w/o some REALY energy burning so we headed to the park. When we returned home at 8:45pm we all had a mug of broth.... there was some "bulking" but in the end everyone drank it (they had no dinner) and were FULL.

Monday we had a normal breakfast of bacon & eggs. Then we headed out to the garden and got some outside work done, in the meantime I put a pot of the chicken stock on the stove with some onions and carrotts and some chicken. WHen lunch time came we all came in and had a bowl. We then went back out- and I am just SHOCKED at HOW FULL we all were-- NONE of us were even "starving" at dinner time (which I thought we would be.). Now I must admit I cheated TERRIBLY for dinner and we had SUBWAY subs.... we laughed thinking how good and healthy our lunch was for us to BLOW it at dinner!! :( But I met my goal-- 1 GAPS meal per day!

Tuesday we had a normal breakfast- Granola. Then for lunch we had the chicken stock with onions, carrotts and chicken. For dinner we had just some more chicken stock, but I allowed everyone to have a sandwich to go with it. Funny when the sandwiches were available-- the soup was NOT a hit!! How interesting!! :( :(

So what will today hold? Well we are OUT of chicken stock--we are MOVING ON TO BEEF STOCK!!

It seems I will be CONSTANTLY making stock-- like REALLY almost everyday-- I'm not sure if this is normal-- but I guess so!!

Any signs already?

Jason-- he has the most signs of detoxing... his eyes are sore & red. He has a terrible runny nose, just like he has a cold..... which is normal they say.

Me and Zachary-- we have times of terrible itching-- mostly our necks....INTERESTING

The rest of us-- NO SYMPTOMS yet... but the rest have been cheating the most. Jason has had the MOST stock vs. meals (due to his sleep schedule).
