GAPS week 2
I cannot beleive how great we all feel this week.
Most of our scratching (itching) has ended....unless we get a small bit of something that doesn't agree with us. Amazing how that works now!
Jason's "cold" symptoms have lessened...thankfully.
We did not follow the "traditional" first week of GAPS because of Jason's work, and my nursing of Rachel but I still think we are seeing wonderful things. (The traditional would have been NOTHING BUT the stock for 3 meals a day for 7 days).
Our first week actually we weren't even planning on doing GAPS fully-- just 1-2 meals a day-- but once we saw the withdrawls we decided to JUST DO IT.
So for breakfast we have been alternating between, eggs, steak, and squash cakes (from butternut squash).
Lunch has been our STOCK/BROTH and once everyone finishes their mug I have had homemade GRAIN FREE crackers with some chicken liver pate or sardene mix. If available I cut up a fresh watermelon to finish the meal. OR a smoothie if we aren't too hungry at all.
Dinner looks EXACTLY like lunch-- and that is good-- and EASY!!
There have been NO SNACKS-- and it is amazing-- NO ONE has wanted/needed a snack-- we are SOOOO full!!!
Jason, Zachary & I have also been losing weight-- which is great-- I don't see anyone else losing, actually Rachel is GAINING!!
However speaking of Rachel-- she had a VERY VERY FUSSY beginning of the week-- and I couldn't figure out WHY? So the 3 things I thought could be triggering I went off of yesterday...those being- cultured dairy (hm yogurt), eggs and the Liver Cleanse tinture. And yesterday she was a WHOLE NEW BABY!!! WHy? I don't know -- I'm gonna stay off all 3 for a few days and see if she reamins happy and content-- and then slowly add 1 back in and see if we can find the GUILTY PARTY!!
This carrot cake has been a HUGE hit-- I didn't think it would be-- but it is DELICIOUS-- and DEFINITLY counts as getting in some VEGES!! (we didn't have the topping)
These Grain FREE crackers are a HUGE hit too.....
A huge help to this diet-- has been BEEF TALLOW-- I didn't think I would ever use this stuff-- and either did Jason as a matter of fact when I bought it from the local farm-- he said-- I don't think you are gonna like this stuff. But we use it when cooking EVERYTHING (eggs, steak, crackers) and I do think it is a HUGE help. WHY BEEF TALLOW? Here is a great post on WHY BEEF TALLOW- here is one reason:
"Reason 4: Saturated fats like beef tallow provide an excellent form of energy for the human body to use. Many of the problems people have with metabolic syndrome, pre-diabetes and diabetes is due to the over abundance of sugars in the diet in the form of empty carbohydrate calories. This requires a lot of insulin to regulate the blood sugar and to store the excess calories as fat. The constant need for insulin creates the problems of insulin resistance and this develops into diabetes."
That pretty much sums up our 2nd week on GAPS!
I cannot wait until we add CULTURED dairy back into our diet-- and TRY MAKING THIS-- Vanilla Kefir Ice Cream!!

I mentioned a Liver Cleanse tinture? WHY? I bought mine from the BULK HERB STORE (see the link)
Very interesting video-- and do you know how often "old timers" ate their FRESH dandelion greens? VERY OFTEN-- it was a cleasning tonic for their bodies!That pretty much sums up our 2nd week on GAPS!
