Why Bone Broth? aka why is this working?

So I have a few people I have mentioned my *LOVE* of this BONE BROTH diet. Yes, it is not REALLY a bone broth diet -- or it's not supposed to be-- but that is what it is to me.

We are technically supposed to be on the GAPS diet-- but after meeting with a dear friend in the very beginning -- she helped me to see how VERY EASY this could/should/would be! She showed me how she keeps a LARGE (very large) pot of bone broth soup on her stove top-- just about CONSTANTLY.

SO that is what I decided to do. (vs. buy the GAPS diet cook book, which I am 100% sure by now I would've GIVEN UP-- and went back to our old ways).

Keeping the stock rolling is SOOOOO super EASY. Yes, I need to think a BIT ahead to get new stock going. (like yesterday I didn't have any-- and we finished up our beef stock Sunday). But over night last night our chicken bones were cooking away.... :)

So what do our simple meals look like?

Well my dear friend has soup sometimes for breakfast-- and maybe this winter we will try that- but I knew for my family they would never go for SOUP for breakfast. It was bad enough I was taking away some of our "regular" breakfast (aka grain foods). SO our breakfasts are now-- vegetables (onions, green peppers, mushrooms) cooked in tallow. (why tallow?) then with eggs (about a dozen four our family) and SOME days some meat (burger, chicken, sausage, etc)... all scrambled together in a large pan.

The rest of the day-- Our MAIN ingredient is STOCK. One LARGE pot of stock lasts our family 3-4 days. The key for us? I keep adding more vegetables (what ever I have on hand) and more meat (burger, steak cooked in the broth, and chicken).

Almost EVERY meal we have this RICH, FULL FAT stock/broth....and it is SOOOO super filling and SOOOOO super healthy and SOOOOOO super HEALING.......

We finish each meal with some FRESH fruit (the children's reward for eating all their stock.).

If you read thru this blog under GAPS... you will see on SOME days I will make special breakfasts (squash cakes) or special treats (peanut butter balls, mounds candy bars, etc) but those are the *special* days-- not every day.

I am just SO surprised at HOW GREAT we feel on this STOCK!! How FILLED we are after just a bowl-- it is AMAZING!!

It is also a great de-toxer-- for anyone who might need it....

Of course on the GAPS we need to be getting our fermented foods in too-- and we are doing that thru some lactofermented saurkraut. (to continue to help with the healing of our guts)

Here are some GREAT posts on WHY STOCK???
